| Gelatin
Gelatin (from French Gelatine) is a transparent, colourless, brittle, nearly tasteless solid substance, extracted from the collagen inside animals’ connective tissue. It has been commonly used as an emulsifier in food, pharmaceutical, photography and cosmetic manufacturing.
Use of gelatin in food products is increasing tremendously. Edible gelatin is an excellent food characterized with high content of instantly digestible protein to other emulsifying and firming agents. Edible gelatin are use in making of candies, marshmallows, low fat yogurt, jam, jelly, instant desserts and many others. |
